Spinach and Feta Puff Pastry Squares 

Ingredients

 Pastry: 2 sheets puff pastry (thawed, but cold)

 Filling: 10 oz frozen chopped spinach (thawed and squeezed completely dry), 1 cup crumbled feta cheese, 1/2 cup ricotta cheese (or cream cheese), 1/4 cup grated Parmesan, 1 green onion (thinly sliced), 1 egg, 1/4 tsp garlic powder, 1/4 tsp black pepper

 Topping: 1 egg (whisked for egg wash), 1 tbsp sesame seeds

Instructions

 Prep: Preheat oven to 400°F (200°C) and line a baking tray with parchment paper. Lay one puff pastry sheet flat on the tray.

 Mix Filling: In a medium bowl, combine the drained spinach, feta, ricotta, Parmesan, green onion, 1 egg, garlic powder, and black pepper. Stir until completely blended.

 Assemble: Spread the spinach mixture evenly over the bottom pastry sheet, leaving a 1/2-inch border around the edges. Top with the second pastry sheet. Press the outer edges down with a fork to seal.

 Score & Bake: Brush the top pastry with egg wash and sprinkle generously with sesame seeds. Using a sharp knife or pizza cutter, score or slice the top into 9 squares. Bake for 25–30 minutes until deep golden-brown and puffed. Serve warm.
