Ingredients
2 ripe bananas, mashed (plus 1 split banana for topping)
1 cup cottage cheese
2 large eggs
1/3 cup pure maple syrup or honey
1 tsp vanilla extract
1.5 cups all-purpose flour (or oat flour)
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
Instructions
1. Prep the Oven: Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper or grease thoroughly.
2. Blend Wet Ingredients: Add the cottage cheese, eggs, maple syrup, and vanilla to a blender or food processor. Process until smooth and creamy to eliminate any cheese curds.
3. Combine Wet & Bananas: Pour the blended mixture into a mixing bowl and fold in the mashed bananas.
4. Add Dry Ingredients: Whisk together flour, baking soda, cinnamon, and salt in a separate bowl. Stir dry mixture into the wet ingredients until just combined.
5. Pan & Decorate: Pour batter into prepared loaf pan. Slice a third banana in half lengthwise and lay the halves cut-side-up on top of the batter.
6. Bake: Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
7. Cool & Slice: Allow to cool in the pan for 15 minutes, then transfer to a wire rack. Drizzle with a light vanilla icing or extra maple syrup if desired before slicing.
