Ingredients
1 cup walnuts (roughly chopped or divided)
1/2 cup rolled oats
2 tbsp unsweetened cocoa powder (plus extra for dusting)
1 tbsp honey (or maple syrup)
1 tsp vanilla extract
Optional binder: 1–2 tbsp water or milk if dough needs moisture to bind
Instructions
1. Process Ingredients: Place oats, cocoa powder, honey, vanilla, and 3/4 cup of the walnuts into a food processor. Pulse until the mixture breaks down and begins to stick together.
2. Adjust Texture: If the mixture feels too dry or crumbly, add 1 teaspoon of water or milk at a time until a sticky dough forms. Fold in the remaining 1/4 cup of whole/chopped walnuts for extra crunch.
3. Press into Pan: Line a small container or mini loaf pan with parchment paper. Press the chocolate dough firmly into an even layer.
4. Chill & Dust: Dust the top lightly with cocoa powder and extra walnut halves. Freeze for 20–30 minutes to set.
5. Slice & Serve: Cut into squares and enjoy chilled. Store leftovers in an airtight container in the fridge or freezer.
