Jalapeño Popper Baked Chicken Breast

Ingredients

 4 boneless, skinless chicken breasts

 4 oz cream cheese, softened

 ⅓ cup sour cream or mayonnaise

 1 ½ cups shredded Cheddar cheese (or Colby Jack), divided

 1 can (4 oz) diced green chilies or 2 fresh jalapeños, seeded and finely diced

 4 slices bacon, cooked and crumbled (optional)

 ½ tsp garlic powder

 ½ tsp onion powder

 Salt and black pepper to taste

Instructions

1. Prep Equipment: Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray.

2. Season Chicken: Season the chicken breasts on both sides with salt, pepper, garlic powder, and onion powder. Place them in a single layer in the prepared baking dish.

3. Make the Topping: In a medium bowl, combine the softened cream cheese, sour cream, diced jalapeños, half of the shredded cheddar cheese, and half of the crumbled bacon (if using). Stir until thoroughly mixed.

4. Assemble: Pour and spread the cream cheese mixture evenly over the top of each chicken breast. Top with the remaining shredded cheddar cheese and bacon.

5. Bake: Bake uncovered for 25 to 30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese sauce is melted and bubbling.

6. Serve: Let rest for 5 minutes before serving. Spoon any melted pan sauce back over the chicken.
