Ingredients

 1 tsp pumpkin pie spice

 1/4 tsp xanthan gum (for thick, fluffy volume)

 Zero-calorie sweetener to taste (e.g., stevia, monk fruit, or erythritol)

 Layers & Toppings:

 1-2 tbsp low-fat graham cracker crumbs

 2 tbsp light or sugar-free whipped topping

 Pinch of cinnamon or extra pumpkin pie spice

Instructions

1. Blend Wet Base: Add the cottage cheese, pumpkin purée, almond milk, and sweetener into a food processor or high-speed blender. Process until completely smooth and silky with no curds remaining.

2. Add Dry Ingredients: Add the vanilla casein protein powder, sugar-free instant pudding mix, pumpkin pie spice, and xanthan gum to the blended mixture.

3. Whip to High Volume: Whip or blend vigorously for 1–2 minutes until the texture expands, becoming thick and light.

4. Assemble: Layer crushed graham crackers at the bottom of a dessert cup. Spoon or pipe the pumpkin fluff over the top.
