Garlic Butter & Cheese Cabbage Steaks

Ingredients

 1 large head green cabbage: Cut crosswise into 3/4-inch thick round “steaks”

 3 tbsp olive oil or melted butter

 2 cloves garlic: Minced

 1 tsp smoked paprika or garlic powder

 1/2 tsp salt & 1/4 tsp black pepper

 1 cup mozzarella or parmesan cheese: Shredded

 1/4 cup diced red bell pepper or red chili flakes (optional, for color and heat)

Preparation

1. Prep the Oven & Pan: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.

2. Cut Cabbage: Trim the bottom stem of the cabbage head, then slice it vertically into thick, round slices (about 3/4-inch thick). Place them flat on the prepared baking sheet.

3. Season & Brush: In a small bowl, whisk together the olive oil (or melted butter), minced garlic, paprika, salt, and pepper. Brush the mixture generously over both sides of each cabbage steak.

4. First Roast: Roast in the oven for 25 to 30 minutes until the edges are golden brown and the cabbage is tender.

5. Top & Melt: Remove the pan from the oven. Top each cabbage steak with shredded cheese and diced red peppers. Return to the oven for 5 to 7 minutes until the cheese is melted and bubbly.

6. Serve hot as a low-carb main dish or side.
