Ingredients
4 cups all-purpose flour
2 tbsp baking powder
1 tsp baking soda
1 tbsp granulated sugar
1.5 tsp salt
1 cup (2 sticks) unsalted butter, ice-cold and cubed
1.5 cups cold buttermilk (plus 2 tbsp for brushing tops)
Instructions
1. Prep the Oven: Preheat your oven to 450°F (230°C). Line a large round baking pan or sheet with parchment paper.
2. Combine Dry Ingredients: Whisk together flour, baking powder, baking soda, sugar, and salt in a large bowl.
3. Cut in the Butter: Add cold, cubed butter into the flour mixture. Use a pastry cutter or fingers to work it until pea-sized crumbles form with visible butter bits.
4. Build the Layers (Lamination): Stir in cold buttermilk until a shaggy dough forms. Turn out onto a floured surface, pat into a rectangle, fold in half, and roll out. Repeat this folding step 4 to 5 times to create flaky layers.
5. Cut the Biscuits: Roll dough to a 1-inch thickness. Press straight down with a floured 2.5-inch round biscuit cutter without twisting.
6. Arrange & Bake: Place biscuits close together touching in the pan so they rise high. Brush tops with extra buttermilk. Bake for 12 to 15 minutes until tall and golden brown.
7. Serve: Brush with melted butter right out of the oven and serve warm.
