Esquites (Mexican Street Corn in a Cup)

Ingredients

 4 cups corn kernels (fresh off the cob, or thawed frozen corn)

 1 tbsp vegetable oil or unsalted butter

 3 tbsp mayonnaise

 2 tbsp sour cream or Mexican crema

 ½ cup crumbled Cotija cheese (or Queso Fresco / Feta)

 ½ cup fresh cilantro, finely chopped

 1 clove garlic, finely minced

 1 lime, juiced (plus extra lime wedges for serving)

 ½ tsp chili powder or Tajín seasoning (to taste)

 Salt to taste

Instructions

1. Char the Corn: Heat the oil or butter in a skillet over high heat. Add the corn and cook, stirring occasionally, for 8–10 minutes until the kernels are charred and toasted. Remove from heat.

2. Make the Sauce: In a bowl, whisk together the mayonnaise, sour cream, garlic, and lime juice.

3. Combine: Add the warm charred corn and half of the chopped cilantro to the sauce mixture. Toss well to coat evenly. Season with salt to taste.

4. Assemble & Serve: Divide the corn mixture into cups or small bowls. Top generously with crumbled Cotija cheese, the remaining cilantro, and a heavy sprinkle of chili powder or Tajín. Garnish with lime wedges and serve warm or chilled.
