Ingredients
1.5 lbs ground beef (or ground turkey/pork mix)
1 medium yellow onion, diced
2 cloves garlic, minced
1 small head green cabbage, chopped into bite-sized pieces (~6 cups)
2 cups carrots, diced
1 can (14.5 oz) diced tomatoes
1 can (15 oz) tomato sauce
4 cups beef broth (low sodium)
1 tbsp Worcestershire sauce
1 tsp Italian seasoning
1 tsp smoked paprika
Salt and black pepper to taste
1 cup cooked white or brown rice (added near the end)
Instructions
1. Brown the Meat: In a large skillet over medium-high heat, brown the ground beef with diced onion and garlic until fully cooked. Drain excess fat and transfer the mixture to the slow cooker basin.
2. Layer Ingredients: Add the chopped carrots, diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, Italian seasoning, paprika, salt, and pepper to the slow cooker. Stir well to combine.
3. Add Cabbage: Pile the chopped cabbage directly on top. (It will sit high initially, but wilts down significantly as it cooks).
4. Slow Cook: Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the cabbage and carrots are tender.
5. Add Rice & Serve: Stir in the pre-cooked rice during the last 15–20 minutes of cooking until heated through. Adjust seasoning with salt and pepper as needed and serve hot.
