Classic Glazed Apple Fritters

Ingredients

 Fritters:

 2 cups all-purpose flour

 1/3 cup granulated sugar

 1 tbsp baking powder

 1 tsp ground cinnamon

 1/2 tsp salt

 2 large eggs

 3/4 cup milk

 2 tbsp melted butter

 1 tsp vanilla extract

2 cups peeled, finely diced apples (Granny Smith or Honeycrisp)

Vegetable or canola oil for deep-frying

 Glaze:

 2 cups powdered sugar

 1/4 cup milk

 1 tsp vanilla extract

Instructions

1. Mix Dry & Wet: Whisk together flour, sugar, baking powder, cinnamon, and salt in a large bowl. In a separate bowl, whisk eggs, milk, melted butter, and vanilla. Stir wet ingredients into dry until just combined, then fold in diced apples.

2. Heat Oil: Heat 2 inches of oil in a heavy pot or deep skillet to 375°F (190°C).

3. Fry: Drop spoonfuls (about 1/4 cup each) of batter into the hot oil, flattening them slightly with the back of a spoon. Fry 2–3 minutes per side until deep golden brown. Transfer to a paper towel-lined wire rack to drain.

4. Glaze: Whisk powdered sugar, milk, and vanilla until smooth. Dip warm fritters into glaze, allowing excess to drip off, and return to the wire rack to set.
