Ingredients
8 thin deli slices of ham (or cooked turkey bacon/deli turkey)
4 small boneless, skinless chicken breasts (halved horizontally to make 8 thin cutlets)
8 slices Swiss or Gruyère cheese
1 1/2 cups shredded mozzarella or Swiss cheese (for topping)
2 tbsp Dijon mustard
2 cloves garlic, minced
1/2 cup heavy cream or chicken broth
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and black pepper to taste
Instructions
1. Prep the Oven & Dish: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with non-stick spray or butter.
2. Season & Fill: Season the thin chicken cutlets lightly with salt, pepper, garlic powder, and onion powder. Spread a small dab of Dijon mustard over each cutlet. Place a slice of Swiss cheese and a slice of ham on top of each piece of chicken.
3. Roll Up: Carefully roll each chicken slice tightly around the ham and cheese filling. Place the rolls seam-side down in the prepared baking dish in a single layer.
4. Add Sauce Base: In a small measuring cup, whisk together the heavy cream (or chicken broth), minced garlic, and remaining Dijon mustard. Pour the liquid evenly around the bottom of the roll-ups.
5. Top with Cheese: Generously sprinkle the shredded mozzarella or Swiss cheese over the top of each roll-up.
6. Bake & Broil: Bake uncovered for 25 to 30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). Turn the oven to broil for the last 2-3 minutes to get the melted cheese bubbly and golden brown.
7. Serve: Let rest for 5 minutes before serving. Sauce from the bottom of the dish can be spooned over the rolls.
