1 cup cottage cheese (blended smooth)
2 large eggs
2 cups rolled oats (blended into a rough flour)
1/4 cup maple syrup or honey
1 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp nutmeg
1 tsp baking powder
1/2 tsp baking soda
1 cup freshly grated carrots
1/3 cup chopped walnuts or pecans (plus extra for topping)
Instructions
1. Prep: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or spray generously with non-stick cooking spray.
2. Blend Dry Base: Blend rolled oats in a food processor or blender until they form a coarse flour.
3. Blend Wet Base: Blend the cottage cheese, eggs, maple syrup (or honey), and vanilla extract until completely smooth and creamy.
4. Combine: In a mixing bowl, combine oat flour, cinnamon, nutmeg, baking powder, and baking soda. Stir in the blended wet ingredients until just combined.
5. Fold Mix-Ins: Gently fold in the grated carrots and chopped walnuts.
6. Bake: Divide batter evenly among 12 muffin cups. Top with extra grated carrots and chopped walnuts if desired. Bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean.
7. Serve: Let cool for 10 minutes before drizzling with honey or maple syrup.
