Ingredients

 3 large crisp apples (mixture of Granny Smith and Honeycrisp or Gala), chopped into bite-sized chunks

 1 cup raw or toasted pecan halves (roughly chopped)

 1 cup dried cranberries (or fresh sweet cherries/cranberries)

 1 tbsp lemon juice (to keep apples crisp and prevent browning)

Honey-Poppy Seed Dressing

 3 tbsp olive oil or avocado oil

 2 tbsp apple cider vinegar

 2 tbsp honey or pure maple syrup

 1 tsp Dijon mustard

 1 tsp poppy seeds

 Pinch of salt and freshly ground black pepper

Instructions

1. Prep the Apples: Place the chopped apples in a large salad bowl and toss them with 1 tablespoon of lemon juice to coat. This adds brightness and stops them from browning.

2. Add Mix-ins: Add the chopped pecans and dried cranberries to the bowl with the apples.

3. Whisk the Dressing: In a small bowl or jar, combine the olive oil, apple cider vinegar, honey, Dijon mustard, poppy seeds, salt, and black pepper. Whisk vigorously (or shake in a sealed jar) until emulsified.
