pan-fried skillet flatbread 

Ingredients

 Flour: 3 cups all-purpose or bread flour

 Instant or Active Dry Yeast: 2 tsp

 Sugar: 1 tsp

 Salt: 1 tsp

 Warm Water: 1 cup (100°F–110°F / 38°C–43°C)

 Olive Oil: 2 tbsp (plus extra for cooking/brushing)

Instructions

1. Prepare Yeast: In a large bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until frothy.

2. Make Dough: Add the flour, salt, and 2 tbsp olive oil to the yeast mixture. Stir until a dough forms, then knead on a floured surface for 5–7 minutes until smooth and elastic.

3. First Rise: Place dough in a lightly oiled bowl, cover, and let rise in a warm spot for 45–60 minutes (until doubled in size).

4. Divide & Shape: Divide dough into 4–6 equal portions. Flatten each piece into a thick, round disc fitting your pan.

5. Prick Dough: Place shaped dough into a dry, preheated skillet over low-to-medium heat. Lightly poke small holes across the top surface with a toothpick or wooden skewer to allow steam to escape evenly without giant bubbles forming.

6. Cook: Cook for 3–4 minutes until the bottom turns deep golden-brown. Flip and cook the second side for another 2–3 minutes.

7. Finish: Brush hot flatbread with melted butter or olive oil.
