
Ingredients
Apple Filling & Batter:
2 cups all-purpose flour
¼ cup granulated sugar
2 tsp baking powder
½ tsp salt
1 ½ tsp ground cinnamon (divided: 1 tsp for batter, ½ tsp for apples)
½ cup milk
2 large eggs
2 tbsp unsalted butter, melted
1 tsp vanilla extract
2 medium Granny Smith apples (peeled, cored, and finely diced)
1 tbsp lemon juice
Cinnamon Coating:
½ cup granulated sugar
1 tbsp ground cinnamon
3 tbsp unsalted butter, melted (for brushing)
Vanilla Glaze:
1 cup powdered sugar
2-3 tbsp milk
½ tsp vanilla extract
Instructions
1. Prep Equipment: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper and lightly spray with non-stick cooking spray.
2. Sauté Apples: In a small skillet, tossed diced apples with lemon juice, ½ tsp cinnamon, and 1 tbsp melted butter over medium heat for 3–5 minutes until slightly softened. Set aside to cool.
3. Mix Dry & Wet Ingredients: In a large bowl, whisk together flour, ¼ cup granulated sugar, baking powder, salt, and 1 tsp cinnamon. In a separate bowl, whisk milk, eggs, 2 tbsp melted butter, and vanilla extract.
4. Combine & Fold: Pour wet ingredients into dry ingredients and stir until just combined. Fold in the cooked apples.
5. Shape & Bake: Scoop 8 to 10 rough mounds of dough onto the prepared baking sheet. Lightly flatten each mound with the back of a spoon to create fritter shapes. Bake for 12–15 minutes until golden brown and cooked through.
6. Cinnamon Coating: While warm, brush fritters with melted butter and coat thoroughly in the cinnamon-sugar mix.
7. Glaze: Whisk powdered sugar, milk, and vanilla together. Drizzle generously over the fritters before serving warm.
