Homemade Ritz Peanut Butter Patties (Copycat Thin Mints / Tagalongs)

Ingredients

 1 box Ritz crackers (about 70–80 crackers)

 1 cup creamy peanut butter

 2 cups milk chocolate or dark chocolate melting wafers (or chocolate chips with 1 tsp coconut oil)

Instructions

1. Prep: Line a baking sheet with parchment paper or foil.

2. Assemble Sandwiches: Spread roughly 1 teaspoon of peanut butter onto a Ritz cracker and top with a second cracker to make a sandwich. Repeat for remaining crackers.

3. Melt Chocolate: Place chocolate melting wafers in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until completely melted and smooth.

4. Dip & Coat: Using a fork, submerge each cracker sandwich into the melted chocolate, coating it completely. Tap the fork against the edge of the bowl to let excess chocolate drip off.

5. Set: Place coated cookies onto the lined baking sheet. Let them sit at room temperature until set, or place in the refrigerator for 10–15 minutes to harden quickly. Transfer to foil tins or airtight containers.

No-Bake Chocolate Peanut Butter Ritz Bark

Ingredients

 1 sleeves Ritz crackers, coarsely crushed

 1/2 cup creamy peanut butter

 2 cups chocolate chips (milk or dark)

 1 tbsp coconut oil or butter

Instructions

1. Melt chocolate chips with coconut oil in 30-second microwave bursts until smooth.

2. Stir in peanut butter until fully incorporated.

3. Fold in the crushed Ritz crackers until coated.

4. Spread the mixture evenly into foil pans or a lined baking dish and refrigerate for 30 minutes until firm. Break or slice into pieces.
