Skillet Apple Cake

Ingredients

 Fruit layer: 2 medium apples (peeled, cored, and sliced), 2 tbsp butter, 2 tbsp sugar, 1/2 tsp ground cinnamon

 Batter: 1 large egg, 1/4 cup sugar, 1/2 cup milk, 2 tbsp vegetable oil or melted butter, 1 cup all-purpose flour, 1 tsp baking powder, 1 tsp vanilla extract, pinch of salt

 Topping: Powdered sugar for dusting

Instructions

1. Sauté the apples: Melt 2 tbsp butter in a non-stick skillet over medium heat. Add apple slices, 2 tbsp sugar, and cinnamon. Sauté for 5-7 minutes until soft and lightly caramelized, arranging them evenly across the bottom of the pan.

2. Mix the batter: Whisk the egg and 1/4 cup sugar until pale. Stir in milk, oil, and vanilla extract. Fold in flour, baking powder, and salt until smooth.

3. Assemble: Lower the heat to low. Pour the batter evenly over the hot apples in the skillet.

4. Cook: Cover the skillet with a lid and cook on low heat for 12-15 minutes until the cake sets and a toothpick inserted in the center comes out clean.

5. Flip (Optional) & Serve: Slide onto a plate, dust with powdered sugar, and serve warm.
