White Chocolate Macadamia Nut Banana Bread

Ingredients:

 3 medium ripe bananas, mashed

 1/3 cup unsalted butter, melted

 3/4 cup granulated sugar

 1 large egg, beaten

 1 tsp vanilla extract

 1 tsp baking soda

 Pinch of salt

 1 1/2 cups all-purpose flour

 1/2 cup white chocolate chips (plus extra for topping)

 1/2 cup coarsely chopped macadamia nuts or walnuts

Instructions:

1. Preheat oven to 350°F (175°C) and line an 8×4-inch loaf pan with parchment paper or a paper liner.

2. In a mixing bowl, mash ripe bananas with a fork until smooth. Stir in melted butter.

3. Mix in sugar, beaten egg, and vanilla extract until well combined.

4. Sprinkle baking soda and salt over mixture and stir. Lightly fold in flour until just combined (do not overmix).

5. Gently fold in white chocolate chips and chopped nuts.

6. Pour batter into prepared loaf pan and scatter extra white chocolate chips and nuts on top.

7. Bake for 50–60 minutes until a toothpick inserted into center comes out clean. Cool in pan for 10 minutes before transferring to a wire rack.

Moist White Chocolate Vanilla Pound Cake

Ingredients:

 1 1/2 cups all-purpose flour

 1 tsp baking powder

 1/2 tsp salt

 1/2 cup unsalted butter, softened

 3/4 cup granulated sugar

 2 large eggs, room temperature

 1 tsp pure vanilla extract

 1/2 cup whole milk or sour cream

 3/4 cup white chocolate chips (or white chocolate chunks)

Instructions:

1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper.

2. Whisk flour, baking powder, and salt together in a small bowl.

3. In a large bowl, beat softened butter and sugar with an electric mixer until light and fluffy (about 3–4 minutes).

4. Add eggs one at a time, beating well after each addition, then stir in vanilla extract.

5. Alternate adding flour mixture and milk to batter, starting and ending with flour. Mix on low until just combined.

6. Fold in 1/2 cup white chocolate chips. Pour batter into pan, smooth top, and sprinkle remaining chips across top.

7. Bake for 45–55 minutes until golden brown and a toothpick inserted into center comes out clean. Cool completely before slicing.
